How to make pasta dough at home, with your mixer

Remarkably easy, you just need flour and eggs (or your variation of these classic ingredients). Here’s how to do it:


  1. Place flour and salt in the stand mixer bowl

  2. Attach bowl and paddle attachment (flat beater)

  3. Turn to speed 2 and gradually add eggs and a little water

  4. Mix for 30 seconds

  5. Stop the mixer and switch the paddle attachment for the dough hook

  6. Turn to speed 2 and knead for 2 minutes

  7. Then, leave it to 'rest'

How to make perfect sheets with the pasta roller

1- Set your mixer to speed '0'

2- Insert the pasta roller into the attachment hub

3- Divide dough into pieces and flatten roughly with your hands

4- Start on the widest roller setting (number 1) to begin kneading

5- Remember to sprinkle flour on the dough to avoid sticking

6- Turn the mixer to speed '2' and begin feeding into the rollers

7- Fold the dough in half and roll again, repeating until it covers the width of the roller

8- Increase to roller setting 3 and then upwards through the settings to get thinner and thinner sheets.

How thick should I roll my pasta dough?

The thickness of your pasta dough sheet will depend on the type of pasta you’re making. Spaghetti or noodles, for example, should be made from quite thick sheets. For tortellini or linguine, the rolled dough must be thin and almost transparent.

Don’t let your precious pasta stick together

Makers of fresh pasta know that it’s important to keep the strands separate after they’ve been cut — and hung to dry for at least 15 minutes before cooking. This is to make sure it keeps its shape and stops it sticking together and clumping when cooked. Once it's fully air dried, you can cook it straight away in your favourite recipe, or keep it in an airtight container to enjoy up to a few months later.

Need your pasta gluten-free? No problem

Wheat flour - which contains gluten - used to be considered a necessary ingredient in pasta. That's definitely not the case any more. There are plenty of alternatives you can use in your pasta dough to make delicious gluten-free fresh pasta.


Tapioca flour, rice flour and potato flour all make excellent substitutes and all work perfectly in pasta machines, makers and cutters. So there's absolutely no need to miss out on your favourite homemade pasta dishes.

Just the right thickness

It’s difficult to get a consistent thickness of your pasta dough if you’re rolling by hand. That’s where a pasta roller machine comes to the rescue. Plug it into the attachment hub of your mixer and away you go. By roughly flattening each piece with your hand, you can feed it through the machine (sprinkling with flour each time to avoid sticking). Starting with the widest of the 8 settings, you keep going, folding in half and rolling again until you reach your desired thickness.

Try your hand at ravioli

If ravioli’s your favourite, then you can turn your homemade pasta dough into beautiful ravioli parcels. Roll the pasta with the pasta roller until about setting 5, and then you can do it by hand if you don’t have a ravioli maker. Place your filling in teaspoon-sized dollops and then flatten and cut with a pasta wheel or pizza cutter to make neat little parcels.
