Make long or short pasta shapes
With the KitchenAid pasta press accessory, you have complete control over the length of your pasta shape. It has a built-in wire cutter, so you can simply cut when the emerging dough is the length you want.
As a rule of thumb, the shorter shapes, which tend to have hollows and curves (or both) are best suited for thicker, heartier sauces, as well as pasta bakes and salads. While longer, thinner strands are used for light sauces, or oil-based or cream sauces. But hey, some rules are made to be broken, so have a go and see what works for you.
