Elevate your brunch with this frosty version of the classic Bellini.

600 ml peach juice
250 ml water
250 g sugar
125 g peaches (fresh or frozen)
60 g red peach puree
Step by step
Divide the peach juice over 4 Plastic Ice Molds. Freeze for 24 hours.
Make the syrup. Add the water, sugar, peaches, peach puree and sage leaves to saucepan. Bring to a boil, lower the heat and let simmer for about 30 minutes or until the syrup has the consistency of maple syrup.
Strain and let cool completely before transferring the syrup to a sealable bottle. Store in the fridge.
Unmold the peach juice ice pucks and place them in the KitchenAid Shave Ice Attachment, turn the speed to 10 and shave the ice into a large bowl.
Divide the shaved peach juice over the glasses, top off with Prosecco and drizzle some peach syrup on top.
