Easy jam biscuits
Whip up those delicious simple biscuits and fill them with homemade jam!

Ingredients
100 g butter, softened
170 g caster sugar
1 tsp vanilla extract
1 large egg
210 g all-purpose flour
150 g seedless raspberry jam
Step by step
Place butter and sugar in a bowl of a stand mixer fitted with a Flat Beater. Mix on speed 2 for 1 minute.
Add vanilla extract and egg. Mix on speed 2 and gradually add flour. Continue mixing until dough forms.
Shape the dough into a ball, wrap in cling film and put in the fridge for 30 minutes.
Remove the cling film, roll out the dough on a floured surface. Divide the dough in two parts.
Press out the biscuits using a round cookie cutter. Place the biscuits on a baking tray.
Place some seedless jam on each biscuits.
Roll out the second part of the dough. Press out the biscuits using a round cookie cutter, then cut out small holes in them.
Top the biscuits with a jam with the biscuits with holes.
Bake for 7-9 minutes in a 190°C preheated oven. Let cool completely.
