Ingredients

3 slices stale bread

1 tsp fine sea salt

2 tsp ground paprika

1/2 tsp dried onion powder

1/2 tsp dried garlic powder

120 g all-purpose flour

2 large eggs, beaten

450 g thick white fish fillet, cut into 4 pieces

3 tbsp butter, melted

Step by step

  1. Break the stale bread into large pieces and place it in the food processor.

  2. Pulse till the bread is finely crumbled. Add salt, ground paprika, dried onion powder and dried garlic powder and briefly pulse 3 more times. Place into a shallow dish.

  3. Place flour into a separate shallow dish.

  4. Place beaten eggs into a third shallow dish.

  5. Dip fish first into the flour to lightly coat it. Coat fish with beaten eggs. Dip the fish in the bread mix.

  6. Pour melted butter in an ovenproof pan. Add the fish. Bake for 20 minutes in a 170°C pre-heated oven.

  7. Turn and bake another 5 minutes until the coating is crispy and the fish is cooked through.
