250 g flour
1/2 tsp salt
60 ml neutral oil
140 g warm water
80 g fresh goat cheese
150 g sour cream
4 figs
210 g matured goat cheese log
6 slices prosciutto
1 tsp fresh thyme
2 tbsp cream of balsamic
Step by step
Place the flour and salt in a bowl of a stand mixer fitted with the Paddle Attachment. Start mixing on speed 2. Add oil and warm water and mix until a dough forms.
Divide the dough into two equal parts and roll them out on a lightly floured surface. Fold the edges of the dough to create a border.
Mix the fresh goat cheese and sour cream in a small bowl. Spread it on both flatbreads. Slice the figs and the goat cheese roll. Top the flatbreads with fig slices and goat cheese slices.
Bake for 10 minutes in a 220°C preheated oven. Turn the oven to the Grill (Broil) stand and broil for 5 more minutes.
Finish off with prosciutto, fresh thyme and a cream of balsamic.
