Homemade classic french onion soup
One of our favourite soups, this onion soup is deeply savoury and topped with cheesy bread!

Ingredients
2,5 large onions
3 tbsp butter
90 ml white wine
1/2 l beef broth
1/2 tsp salt
1/2 tsp black pepper
1,5 sprigs fresh thyme
1 fresh bay leaves
75 g gruyere cheese
1/2 baguette
Step by step
Slice the onions thinly with the Food Processor attachment fitted with the slicing disc.
Melt the butter in a large pot and add the onions. Toss the onions around so they are covered in butter completely.
On low heat, caramelize the onions slowly. Leave the pot uncovered and don’t over-stir the onions. This process can take up to 45 minutes.
Add the white wine, increase the heat and cook for 5 minutes.
Add the broth, salt and pepper and fresh herbs. Simmer for 30 minutes with the lid on.
In the Food Processor fitted with the shredding disc, shred the Gruyere cheese.
Slice the bread and sprinkle the cheese over it. Put the bread under the broiler until the cheese start to bubble and brown slightly.
Serve the soup in deep bowls and cover with the slices of bread.
