Ingredients

large handful of basil, mint or parsley

1 lemon, zested and juiced

50 g toasted pine nuts

4 cloves smoked garlic, peeled

4 tbsp grated parmesan

2-4 tbsp olive oil for pesto

a pinch sea salt and black pepper

500 g pasta

250 g king prawns

olive oil for frying

Step by step

  1. Place basil, lemon zest and juice, toasted pine nuts, peeled smoked garlic, grated parmesan, and olive oil into Cordless Food Chopper. Blitz the pesto until you have a loose, smooth pesto sauce. Season to taste.

  2. Boil your pasta in salted boiling water for 10-12 mins. While the pasta is cooking caramelise your chopped red onion in a frying pan with king prawns.

  3. After 4-5 mins add in a large spoonful of your pesto sauce and cook until the prawns are coated in the herby pesto.

  4. Using a slotted spoon take your cooked pasta and transfer to the pesto pan, stirring to emulsify the pesto and evenly coating the pasta.

  5. Serve with extra grated parmesan and fresh basil.
