This salmon toast with avocado chimichurri is great served as breakfast, brunch or lunch!

Ingredients

25 g cilantro

25 g parsley

1 lime

1 avocado

3 garlic clove

1 tsp chili flake

1 tsp salt

100 ml olive oil

6 bread slice

3 tomatoes

250 g warm smoked salmon

Step by step

  1. Place the fresh cilantro and parsley in the jug of the Food Processor. Juice the lime and add the juice to the jug. Add the avocado, garlic cloves, chili flakes, salt and olive oil. Pulse to combine.

  2. Set the Toaster to the desired brownness level. Place the sliced bread in the slots of the toaster to toast.

  3. Spread the chimichurri on the toasts. Slice the tomatoes and place the slices on the bread. Finish off with the warm smoked salmon.
