Whipped Brie dip with caramelized onions

Ingredients
6 pearl onions
30 g butter
1 tbsp dark sugar
1/2 tsp black pepper
1/2 tsp salt
20 ml balsamic vinegar
20 ml water
2 sprigs thyme
500 g brie (without rind)
1,5 tbsp honey
Step by step
Peel and halve the pearl onions. Melt the butter over medium-low heat and place the onions in the pan, cut side down. Cook for 10 minutes, stirring every few minutes.
Sprinkle the sugar over the onions and cook for 3 minutes. Add the black pepper, salt, balsamic vinegar and water. Lower the heat and cook for 20 minutes. Add the thyme when the onions are caramelized.
To make the dip, remove the rind from the cheese. Ensure that the cheese is cold to facilitate this step. Once you have removed the rind, allow the Brie to sit out until it reaches room temperature.
Add the cheese together with the honey to the bowl of a Stand Mixer fitted with the Paddle Attachment. Slowly bring to speed 8 and whip until the Brie becomes smooth, spreadable, and lightens in color.
Transfer the whipped Brie into a serving bowl and top with the warm caramelized onions. Serve with bread or crudités.
