Five tips to help you make the perfect pancake.
Fluffy or crispy thin, sweet or savoury, there’s no contest. But if there was, pancakes made from homemade batter would beat ones from shop-bought pancake mixes every single time. True, pancake mix is quick and easy. But if you like your pancakes in a particular way – extra fluffy or just a tad sweeter – there’s only one way to hit the spot: make them from scratch. Ready to make the perfect homemade pancake? Your fluffy, flavourful, and beautifully golden pancakes are just a flip away if you follow these five tips:
1. Don’t overmix your batter.
Why? Mix it too long and you’ll end up with dense pancakes. Avoid this pancake fail by stirring until the ingredients are just combined. Don’t worry if your batter still has a few lumps in it – they’ll dissolve during cooking.
2. Let the mixture rest.
Don’t pull out your pan just yet. Set your batter aside for a few minutes first. This will allow the flour to absorb the liquid, meaning your pancakes will turn out fluffier.
3. Preheat your pan.
Before you pour out the first ladle of batter, make sure your pan or griddle is heated up to temperature. By doing this, your pancakes will cook evenly and won’t stick to the pan.
4. Choose your preferred cooking fat
What’s the best cooking fat for pancakes? Butter or oil? Fair question. But there’s no right or wrong answer. Butter gives your pancakes more flavour, but it may also cause them to brown too fast, and burn before they’re cooked all the way through. You won’t run that risk with vegetable oils like rapeseed or sunflower oil as they have a higher smoke point. But then again, they don’t add as much flavour as butter does. It’s a tricky choice – but you’ll soon work what you like best.
5. Cook and flip your pancakes.
You’re aiming for pancakes that are thoroughly cooked and golden brown on both sides. Cook them one at a time. When your pancake has air pockets or bubbles on the top side and your crêpe starts to pull away from the sides of the pan, it’s time to flip. This is the exciting part. Our tips? Use a spatula. Do it gently, yet quickly, and with confidence. And adjust the heat if needed.
